Ingredients for the Lime Pickle Masala:
- Garlic-15 cloves
- Ginger-50 grams
- Curry leaves-4 sprig
- Seeds of Mustard-1 tsp
- Methi Seeds-1 tsp
- Red chilli-1 tbsp
- 1 tsp (Haldi) Turmeric powder
- Asafoetida (hing)-1/2 tsp
- Sesame Oil-1/2 cup
- Vinegar-1/2 cup
- Salt
- Jaggery-1 tbsp
Procedure for Lime Pickle Recipe (Spicy):
- To start preparing the tasty Lime Pickle, in a big saucepan; boil the limes using salt & water. Lower with moderate flame & simmer for twenty mins till the limes are gentle. Drain the liquid & let the limes to cool. When cooled cut in tiny bits.
- In a tiny vessel, mix the turmeric powder & chilli in a less content of water to prepare a paste & put beside. By combining spice powder in the water, it stops the powders by flaming as they hit the burning vessel.
- Heat this oil in strong bottomed vessel with low heat; drop in the seeds of mustard & let it to crackle. Now drop the seeds of fenugreek & curry leaves & stir for like 60 seconds.
- Stir in the sliced garlic & ginger & sauté for like ten mins with moderate flame. Drop in the paste of powder & stir for four mins. Then drop in the sliced lemons & stir properly, see for salt & regulate for flavor. Eventually drop the jaggery & turn off the gas. Stir every components till well mixed. Let the mix for cooling.
- In a distinct vessel, include the vinegar & take it for boiling. When cooled stir into the Lime Pickle mix which is spicy. Shift to a glass vessel & keep for storage.
